Last night we attended the Tiffany&Co Atlas event at the Rodeo drive Tiffany&Co store. The most exciting part was chatting with party host and fashion blogger, Aimee Song of Song of Style!

Fresh and healthy recipes to start your week off right.
Warm Morning Quinoa
⅔ c. quinoa, cooked in almond milk
1 T. chia seeds
½ c. peaches or berries
¼ t. cinnamon
¼ t. nutmeg (optional)
1 t. honey
In a bowl, mix together quinoa, chia seeds, and fruit. Sprinkle on cinnamon and nutmeg, if using.
Mediterranean Chopped Salad
¾ c. canned garbanzo beans, drained and rinsed
2 c. total chopped cucumbers, tomatoes, yellow bell peppers
1 to 2 T. chopped fresh basil and parsley (optional)
1 t. olive oil
2 T. fresh lemon juice
Pinch of salt
⅓ cup cooled cooked quinoa
Combine ingredients and serve.
Fresh Mini Pizzas1 slice of bread
1 large tablespoon of pizza sauce
2 pepperoni slices
1/4 cup mozzarella cheese
2-3 tablespoons of fresh Parmesan cheese
1 teaspoon Italian seasoning
1 tablespoon olive oil
Preheat oven or toaster oven to 450 degrees. On a greased cookie sheet, place bread and drizzle with olive oil on both sides. Spread pizza sauce and add pepperoni. Sprinkle mozzarella and Parmesan on top of pepperoni. Sprinkle Italian seasoning on top. Bake in oven for 10 minutes, or until cheese is bubbling and golden brown. Let stand for 2-5 minutes and serve.
For easy, on-the-go lunches, make multiple pizzas ahead of time and freeze. Re-heat in toaster oven or microwave.
